Ok heres my final results from the various ideas suggested:
1) Updated my phone firmware via the new Samsung PC Studio to the following version:
Phone: Samsung I8510 (16GB)
Software version: I8510XXHJ3
Software version date: 07/10/2008
Custom version: I8510L08XEUHJ1
Custion version date: 01/10/2008
Result = Unable to send SMS message from phone
2) Inserted my o2 simcard into my friend's Nokia phone and was able to send a sms text successfully. Inserted my friend's TMobile simcard into my unlocked I8510 phone. Waited a while before attempting to send out sms message with the TMobile simcard still in my phone.
Result = Unable to send SMS message from phone
3) Edited a few phone numbers in my phonebook by replacing the starting "0" with "+44" and tried to send out a sms text to those numbers.
Result = Unable to send SMS message from phone
So in conclusion, none of the ideas suggested on this forum have worked. As stated in my previous post, I had even sent my phone to the Samsung Repair Centre who could still not resolve the issue. Having spoken to the Samsung call centre people, they said they have not come across this issue before (eventhough I mentioned lots of other users have reported the same problem). They told me just to upgrade my phone software and if that doesn't work then send it back to the repair centre (AGAIN!).
I am really disappointed in Samsung's customer care service, which is a shame as I really like this phone.
FYI: I emailed the Samsung website with the above details to and received back the following response from them:
Thank you for contacting Samsung Electronics.
The next step would be to have a repair arranged for the phone. An
engineer needs to take a look to establish if it is a hardware or
software fault. There is nothing else we can advise you to do as it
seems you have completely tested the phone yourself. Please call our
contact centre so we can arrange a repair for you.

Not sure what they did to fix the problem exactly as they stated they re-flashed the phone with the latest software, but the software stated above was the same version as the one they flashed it with last time.
The ONLY DIFFERENCE this time is that as soon as I received the phone, I DID NOT connect it up to the Samsung Studio on my phone and restore all the original backed-up data (which I did last time). I've just simply taken the phone as it has come from the repairers and slowly manually customising my settings and re-inserting my contacts on the phone which is taking ages, but still at least the SMS text messaging works now.
