I bought this phone from a freind and he had deleted Fifa 08, CNN and Yahoo. I can see that tracked on the log

How can I reload these? Where do I get the file from??

Fifa 08 is stored on the ROM, you can find it with X-Plore or any other explorer, the other two you can find on the appropriate websites.

I have searched all the file tree's on the phone and the only application I can find on the phone is route66 (system/apps/route66). I can't find anything else? Am I looking in the wrong place or with the wrong tool?

I also upgraded the firmware off the Samsung site (i8510XXIA2 software v and I8510XEUIA1 custom) before reading the post. In doing so I have now lost Asphalt so am two games down but I picked up roadsync and Yahoo...

Help?!....

Maybe you should use X-Plore and set the settings that it show you the invisible system drives too.

In my opinion the easiest way to get the applications back is to flash another firmware by using apollo, you just have to find the right one that has installed the apps you want.
